Ai Hisano
Ai Hisano is a senior lecturer at the Graduate School of Economics at Kyoto University. She was a Newcomen Postdoctoral Fellow in Business History at Harvard Business School (2016–17). Hisano specializes in history of the food industry, with particular interest in social and cultural consequences of business activities. Her publications include ‘The Rise of Synthetic Colors in the American Food Industry, 1870–1940’ (Business History Review, 2016). She has also published an essay on the scholarly use of food market research and encyclopaedia entries on food additives and the consistency of food quality.
