Mathias Porsmose Clausen

Mathias Porsmose Clausen, Ph.D., is a research scientist, associate professor and leader of the gastrophysics and culinary chemistry group at the University of Southern Denmark. His work focuses on characterization of biomolecular structures within biotechnology, cell biology and food, applying a range of analytical chemical, physicochemical and physical methods and optical microscopy techniques. He recently received a young group leader grant aimed at implementing novel microscopy technique to study microstructural changes in food during culinary preparations. He has published in recognized scientific journal across different scientific fields and is a dedicated scientific communicator and organizer of events engaging the public in science and gastronomy.
