Mie Thorborg Pedersen
Mie T. Pedersen is a Ph.D. student within gastrophysics at the University of Southern Denmark. Her work focuses on using different theoretical and experimental approaches to obtain a fundamental scientific understanding of culinary preparations of jellyfish. Mie’s work has among other things lead to the discovery that jellyfish can be turned into crispy crisps.
